House Hunters 2.0 and 3.0

Well these past few weeks have truly been a whirlwind! John and I went under contract on two houses. haha Let me share:

After we lost the first house we put an offer on, John and I took somewhat of a break and then went at it again. We found a house in Holly Springs (2 actually) that we really liked a lot. After looking at them, we decided to put an offer on both! Unfortunately, the one we REALLY wanted had already gone under contract, so we decided to still go under on the other. We really didnt want to lose another home. So we worked out the details and signed our life away. haha. 

The house was fantastic! However, it was REALLY small and needed some work. By some work, I mean the kitchen basically needed to be renovated. We could have dealt with it, but it really needed some major TLC. 

We decided that we wanted to keep looking some and while Krystal and Josh were here, we decided we wanted to go see a few more houses, but this time in Clayton. If nothing worked out this time, we were going to keep the house in Holly Springs. Well, we fell in love with two of them and decided to put offers on both. haha. We still didnt want to let the other go until we were sure we could get one of these, so we had 3 offers out there and 1 contract. lol. We are crazy.

Both of these houses are GORGEOUS! After putting offers, we decided to go and see both houses again that weekend before we made our decision and signed another contract. At this point, we did release the house in Holly Springs. We knew it just wasnt for us after all. 

One of the houses we wanted in Clayton was under construction and if we were able to go under contract on it by Monday, they would let us pick out a bunch of the stuff that they still needed to order- the paint, the back splash, the floors, etc! After going back on Sunday and touring both houses again and bringing our parents, we decided to go with the new construction. Many perks to it being new and we were going to be able to customize it some! SO EXCITED!

Monday, we got the word we could go and pick everything out. I left work early and we headed to Clayton! It was SO much fun. Very overwhelming though. haha. Then we went to the house and took a bunch of measurements. :D Such a fun, blur of a day.

Tuesday, we got a call asking us if we were still interested in the house under construction. UM WHAT? We just picked everything out? Turns out we were not officially under contract because the builders had not signed the paperwork. NOT OUR FAULT PEOPLE. Part of the contract that we worked out allowed us to add a few upgrades, including putting the wood laminate flooring throughout the living room and down the hall. This required a deposit. Well they didnt ask for the deposit when we were there picking out everything, but since they didnt have it Tuesday morning they didnt know if we still wanted the house. Makes sense, right? John ended up having to drive the check out there to them and by 6pm we were officially under contract. It was a very stressful day. We were just glad it all got worked out!

Now, we just have to get our loan secured and then I can plan my life in this house :D

Friday Favorites!

It's been awhile since I have done these. I got a little inspiration from Krystal and also remembered why I used to do them. I think it's important for me to do to look back on the week and pick out what was good. It's really easy to get caught up in the negatives in life- why not try to focus on the good?!

1) HOUSE!- we went under contract on a house AND got to go pick out some of the flooring, finishes, back splash, paint, etc (I'll post on this later!).

2) PUMPKIN SPICE COFFEE! and everything pumpkin :D

3) Fall is officially here!- I decorated for it and am loving this weather!! I only decorated a little bit since hopefully we will be moving! But I was afraid if I didnt decorate some, it wouldnt happen for the fall.

5) Dinners- John cooked for most every night! I dont know how I got so lucky! So I'll just say a thank you prayer for this amazing man :D Dinner was delicious too!!

Clemson Game Weekend FUN!

Last week John and I had Thursday and Friday off together! We both made sure to have those days off for the Clemson game that was Thursday night. 

We and had Krystal, Josh, and Kallie come down to visit for the game too! They all got in Wednesday night and we hung out for a bit before hitting the hay to prepare for the game the next day!

Thursday we got up and started preparing all the foods for the tailgate. We had SO much yummy food and Kallie brought burgers from her parents farm (which were amazing!). We actually got out there early and had to wait in line for the tailgate lot to open! I was really proud of us. haha. Then we set up and had a great time playing cornhole and just hanging out. We had some old friends stop by to say hi, and Krystal and I also had an old sorority sister come by that we hadnt seen in like 8 years! Crazy. Of course we had a ton of fun and then we still got to go to the game! We had seats waaaaay up top and in the Clemson section (haha!) but we still had a great time because there were 10 of us sitting together. Unfortunately  we didnt pull out a win, but we also were not blown out- which is great because they were ranked #3 in the nation!

Our Boards! We finished painting them- And then TWO different idiots in Lowe's told me that some sort of varnish would be what we want to seal them with. Promised me it would be clear over the white. IT WASNT. UGH. So we went and got some sandpaper to sand that crap off and some polycrylic to cover it with. Here they are with the varnish crap. :(

While we were gone the pups got to play all day! which was great because they wore each other out! haha. 

Friday, John and I actually got up to go look at some houses. We had a few more we wanted to see before we went through with one we had placed an offer on (more about this in another post!). After a successful hunt (!!!) we met up with Krystal and Josh at Raleigh Brewing Company. We also had Brad, Jenny, Chris, and the Klingenmaiers come up there to hang out. We had a great time and then we all headed back to our place to hang out. We tried out Elevation Burger across the street for dinner and I have to say that it was DELICIOUS! :D 

Saturday, we got up early again and actually headed back to Raleigh Brewing Company. They were hosting people to brew in their brewery! Krystal and Josh had brought their all grain equipment down so we could brew an all grain batch for the first time, so this was perfect! We brewed a pumpkin ale that I'm really excited about! The pups got to come with us to brew too. They were pooped after and passed out on the way home. haha :D 
The Kinlaws left Saturday evening and I ended up going out to Johns work to discuss houses over dinner. Sunday we went and looked at two more again and actually changed the house we wanted to buy! More on this soon!

The weekend was fantastic! Again, cant wait for the Kinlaws to move back so we can have adventures all the time! haha :D

Yummy foods

I have been trying to do a MUCH better job of cooking lately and feel I have been pretty successful! haha. I need to get better about adding them to here, it's really easy to have John look at the list and tell me what he wants for the week :D Here are some of the foods that I have tried that we have liked! 

Buffalo Chicken Pasta- 

This one was delicious. We really like buffalo flavored anything, so we thought pasta would be fun to try- very yummy, but not that healthy. Its a treat kind of meal. haha. I didnt really use much of a recipe, I used one for guidelines but then made my own recipe up, so I am not really sure about quantities. 
Ingredients:
1 chicken breast
4 oz cream cheese (I used neufchatel cheese)
Frank's Red Hot Sauce- I used a lot, but add to your liking
Blue cheese dressing- just a little (and next time I would leave it out)
Milk- I used it to thin the sauce
1 clove garlic, crushed
1/2 tsp paprika
1/2 tsp black pepper
Pasta- I used penne

Instructions:
I cut the chicken up into bite sizes and cooked it in a pan. 
I cooked the chicken in some hot sauce to give it flavor. 
Meanwhile, I cooked the pasta according to the package instructions. Drained and set aside.
In the pan another pan, I melted the cream cheese, hot sauce, blue cheese, and milk together. I added milk a little at a time to thin the sauce.Then I added the garlic, paprika, and pepper. I cooked until everything was creamy and added the chicken. Then I poured it over the pasta. 
YUMMO!

Chicken Alfredo Lasagna Roll-ups-
Ingredients:
10 lasagna noodles
2 1/2 cups alfredo sauce (I made some with a packet mix)
2 cups cooked shredded chicken
spinach
oregano
garlic salt
3 cups shredded mozzarella cheese or 3 cups cheese, of your choice

Instructions:
Cook noodles according to instructions and prepare the alfredo sauce you are planning to use. When the noodles are done, lay them out flat. Spread about 2 Tbs. alfredo sauce over each noodle. (refrain from placing too much sauce; you will have a big mess on your hands) Sprinkle oregano and garlic salt on top of sauce. Take 1/9 of the shredded chicken and some spinach and spread it out evenly over each noodle. Add approximately 3 tablespoons cheese. To roll up, start at one end and roll the noodle over the toppings, lifting the noodle a little to prevent squishing out the inside ingredients while rolling. Place the roll-ups in the prepared pan, one by one, seam-side down. Once they are all in the pan, pour the remaining alfredo sauce over the top. Top with remaining cheese. Bake at 350 degrees for about 30 minutes or until the cheese is completely melted on top.
SO GOOD!

London Broil-

For this one I didnt really follow a recipe either. I let it marinate in Lipton Onion Soup overnight. Then broiled it until it was done. It wasnt done in this picture, so I ended up cooking it a little longer. It was really good though. I added some green beans around it to soak up some of the soup for flavor. Really good!



Shrimp salad!
John actually made this one. I'm not sure how he flavored the shrimp, but YUM. I'm sure you can do it however you want. Then he just threw a salad together. Lots of veggies! He did some potato thins on the side too. We havent been able to get those right yet, so I wont post how to do those until they are better. haha. 
Twice Baked Cauliflower-

Ingredients:
1 large head cauliflower
4 oz. low fat cream cheese (do not use fat free)
1/2 cup low fat sour cream (do not use fat free)
1/4 cup minced green onions
1/4 cup freshly grated Parmesan cheese 
6 slices bacon, cooked until very crisp, fat blotted with paper towel and then crumbled
1 cup reduced fat sharp cheddar cheese

Instructions:

Preheat oven to 350F/180C. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling salted water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in light cream cheese, light sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.
Spread evenly in a medium-sized glass casserole dish. Sprinkle with low-fat cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly.

Johns not a big fan of cauliflower, but he really likes this! Me too!

Lemon Blackberry Bread-
Ingredients:
1/3 cup butter, melted
1 cup sugar
3 tbs lemon juice
2 eggs
1 1/2 cups AP flour
1 teaspoon baking powder
1 tsp salt
1/2 cup milk
2 tbs grated lemon zest
1 cup fresh or frozen blackberries
2 tbs lemon juice
1/4 cup sugar

Instructions:
Preheat oven to 350F. This recipe makes 1-8x4 inch loaf pan.
In a large mixing bowl, beat together butter, sugar, lemon juice, and eggs. Combine flour, baking powder, and salt; stir into egg mixture, alternating dry mixture and milk. Fold in lemon zest, and blackberries. Pour batter into prepared pan.Bake in oven for 60 to 70 minutes or until a toothpick inserted into the center of the loaf comes out clean. Cool bread in pan for 10 minutes.Combine lemon juice and sugar in a small bowl. Remove bread from pan and drizzle with glaze. Cool on a wire rack until the glaze looks milky and slightly crusted.
Homemade Apple Pie!-
Ingredients:

Crust Ingredients
2 cups all-purpose flour, plus extra for rolling
1/2 cup finely ground blanched almonds or almond flour (can substitute 1/2 cup flour if you don't have almonds)
16 Tbsp (2 sticks) unsalted butter, cut into 1/2 inch cubes, chilled in freezer for at least 15 minutes
1 teaspoon salt
1 heaping teaspoon brown sugar
3 to 6 Tbsp water, very cold

Filling Ingredients
2/3 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground allspice
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
3 pounds of 1/4-1/2 inch thick slices of peeled and cored good cooking apples 
1 teaspoon vanilla extract
Egg Wash
1 large egg yolk
1 Tbsp cream

Instructions:
In a food processor, combine flour, almonds, salt and brown sugar, pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add water 1 Tablespoon at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready, if not, add a little more water and pulse again.
Remove dough from machine and place on a clean surface. Carefully shape into 2 discs. Do not over-knead the dough! You should still be able to see little bits of butter in the dough. These bits of butter are what will allow the result crust to be flaky. Wrap each disc in plastic wrap and refrigerate at least 1 hour.
Position rack in bottom third of oven and preheat to 375°F.
Combine sugar, flour and spices in large bowl. Use your hands and mix in the apples so they are well coated, then add vanilla extract.
Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes. Sprinkle some flour on top of the disk. Roll out with a rolling pin on a lightly floured surface to a 12 inch circle; about 1/8 of an inch thick. As you roll out the dough, use a metal spatula to check if the dough is sticking to the surface below. Add a few sprinkles of flour if necessary to keep the dough from sticking. Gently fold in half. Place on to a 9-inch pie plate, lining up the fold with the center of the pan. Gently unfold and press down to line the pie dish with the dough.
Spoon in apple filling, mounding slightly in center.
Roll out second disk of dough, as before. Gently turn over onto the top of the apples in the pie. Pinch top and bottom of dough rounds firmly together. Trim excess dough with kitchen shears, leaving a 3/4 inch overhang. Fold dough under itself so that the edge of the fold is flush with the edge of the pan. Flute edges using thumb and forefinger or press with a fork.
Stir yolk and cream in small bowl to blend. Brush over top of pie. Cut slits in top crust to allow steam to escape. Bake pie until crust begins to turn golden, about 20 minutes, then reduce heat to 350°F. Tent the rims with aluminum foil or a pie protector if the edges are browning too quickly. Bake until crust is golden and juices are bubbling, anywhere from an additional 30 to 45 minutes, depending on the type of apples you are using. Transfer to rack; let stand 1 hour. Serve pie warm or at room temperature.
I think for my first homemade pie, it came out very well! There are some adjustments I'll make next time, but it was pretty good :D

House Hunters!

I mentioned in my last post that John and I are looking for a house! It's a VERY exciting time for us :D 

It all started when we decided to get credit cards to help build our credit and while we were there we happened to decide to see if we could get approved for a loan. and BAM! We did! So we decided to start looking more seriously. We have been "looking" for awhile now, but not seriously until about a month ago. 

We found a good realtor (recommended to us by a friend) and have already been to see a lot of houses. It is so much fun going around looking at houses! We were pretty open minded when we started looking, but have started to narrow down what we want. We are still somewhat undecided, but know what is important to us. We are mostly still trying to decide between suburbia and country living. haha. There are perks to both for sure. We really wanted some  yard for Carter to play and I would really like an open floor plan- but everything is negotiable for the  most part for the right house!

John and I have found two houses so far that we were really interested in and one we even put an offer on!! It was gorgeous. It was kind of far though. Anyway, our hearts were broken as it was stolen out from under us. We were under a verbal contract and just had to sign the papers. While we were meeting with our realtor to sign paperwork, another couple put a better offer on the house and the sellers took their offer and didnt even give us a chance to up ours. Oh well. John and I have covered our entire process in tons of prayer and that just means that house was not where the Lord wanted us. The house we put an offer on actually sat for a good 3 months, John and I signed the paperwork, said a final prayer for the Lord to put up a road block up if it wasnt meant to be and then our realtor called and told us the news about it being gone. Talk about some divine intervention. haha. I dont know what a bigger road block could have been. 

Of course I cried, but then realized that if it's not where God wants us, then I dont want to be there anyway. So we are still looking and praying for the right house! I am trying to be patient, but I am ready to have a house I can decorate! haha. All in due time, I guess. :D 

Anyway, I am excited to be going through this process and I hope that soon we will have some good news to share! :D

MIA

Sorry for being MIA. Life has been crazy this summer! I also feel like this summer has flown by. I am not quite ready for Fall yet, because I dont want summer to be over. But I am excited to have my first Fall in 3 years!! Anyway, I will give some highlights and throw in some pictures to help fill in the past few months. haha
  • We finally settled all the accident stuff! We got our monies and everything has been paid off. We are very glad to be done and came out ahead a little, which is always good :D
  • JOHN AND I ARE LOOKING FOR A HOUSE!!!!! This constitutes a post in itself, but has been a large reason for being MIA. It's very time consuming!
  • John and I made a trip up to Maryland to visit Krystal and Josh! It was a quick trip, but TONS of fun. We relaxed a lot, let the puppies play together, and we toured Flying Dog Brewery, which gave us a completley different attitude about their beer! We are big fans now. haha. This was also Carter's first trip to Maryland to visit Bailey! It went great! :D They love each other so much- it's really cute :D

     They exhausted each other. This is as much cuddling as they will do. haha
  • Krystal and Josh made a quick trip down here too! Again, lots of fun :D  I didnt get any pictures but it did end with a pool party at hutch's! It was of course rained out, but we made the best of it! Lots of fun. I cant wait for them to live closer one day! :D
  • John and I had a bunch of date nights- of course :D We made some homemade pizzas, brewed our first batch of beer in Raleigh!, went to see American Aquarium a few times, and got to see Brad play as well! :D

  • I got to learn how to can pickles!! John's parents had me over since I would like to start canning and let me in on the process. It's time consuming, but something I would love to do more of! :D



 

  • On a not so fun note, Carterbutt has been battling what we thought was ringworm. He's been treated for it for the past few months and he still has it. Luckily, it looks mostly gone now- thank goodness! Treating it was getting very expensive!
  • Julie, John's sister is in full wedding planning mode as her day is quickly approaching! A few weeks ago we had her wedding shower  and it was a lot of fun. Of course I forgot to take pictures :(. I did make fun little favors of mason jars with peoples names on it for them to drink out of and take home. Of course there was tons of good food and fun games played. It was really nice to get to see a lot of family too! Her wedding will be here quicker than we know it!
    I did get a picture of the food! haha :D 

  • Most importantly, FOOTBALL IS HERE! :D haha. I am a little excited about this, if you cant tell. I am SO excited for college football. :D Here is to hoping this season is a good one :D
